Track time between stages

I'm trying to track time between stages in a pipeline. For Example, how long does it take for a Deal to go from Negotiation > Closed Won. Dynamics seems to track this, but I'm not sure how to access this information so that we can report on it and create charts in PowerBI
 
In the screenshot below, Application Process Flow is a flow that we've created. It seems to create a table, and the assumption was that a new row would be added for each stage change, but that doesn't seem to be the case.//

    Hi Partner,
    Currently, there is no OOB way to track time between stages.
    Generally, we are using another new table to store time data, and workflow/power automate to capture time automatically.
