Updating Fields on Contact Card for Subscriptions

We want to showcase what contacts have subscribed to via the consent form through customer insights. I know there's a component feature that can show this, however it doesn't appear to be working/seems glitchy and I also don't think a user that isn't assigned the customer insights license would be able to view it. We have yes/no fields built on the contact card - one for each topic a contact can subscribe to. Is there a way to get those fields to update to yes when a contact consents to receive emails on that topics and no when they remove the consent to receive? I also have the same question on unsubscribes. Is there a way to get the 'allow bulk email' field to switch to 'don't allow' when a contact unsbuscribes from receiving all emails?
